The Harvest

How do you harvest oysters?

In order to catch the perfect fresh oysters you need to wait until low tide. This is because oysters live in the bottom of the bay, and it's hard to see them. While on the boat at low tide, you throw the cage in the water. After you catching oysters, it is important to some shells back into to the water. This is because the hard texture of the shells allows oysters to grow.

     This graph shows the millions of pounds of oysters that were harvested in the Chesapeake Bay form 1880-2008. As you can see, harvesting was very popular and very important, but slowly decreased over time.

        The lowest harvest rates in history were 1990 and 2001.
